Spiced Squash and Cider Soup
- 3 ½ cups cubed and peeled butternut squash
- ¾ cups of chopped carrots
- ½ cup of chopped sweet onion
- 1 tablespoon of butter
- 1 ½ cup of chicken broth
- 1 cup of Woodchuck Spiced Apple Cider
- ¼ cup of half & half
- 1/8 teaspoon of salt
In a large saucepan, melt the butter and sauté the butternut squash, carrots, and sweet onion for about 10 minutes. After, add the chicken broth and Spiced Apple Cider to the saucepan and bring to a boil. Once you see those rapid bubbles, cover, reduce heat to low-medium, and simmer for about 30 minutes (alter the temperature accordingly).
After your mixture has simmered into savory goodness, remove from heat and add the half & half and salt and pour into your preferred blender. (KEEP IN MIND: depending on the blender, you could see a good amount of splatter, so cover with a dish towel if necessary!) Once ready, blend away until smooth, or your desired consistency.
Grab a couple of bowls, toast up that French baguette, grab a seat in front of the fire, and enjoy!
