Woodchuck Gumbo!

You made the Woodchuck® Chili for game day last year, and it was awesome. Unfortunately this year, your sister has claimed the dish to try her boyfriend’s super-secret recipe (which isn’t secret, he uses the grocery store packets). So you need something new. Something sweet, something spicy, and something with Gumption. Why not try the Woodchuck Gumbo!
Woodchuck® Slow Cooker Gumbo
Servings: 6-8
Ingredients
- 1 ½ lb. boneless chicken breasts cubed
- 1 lb. chorizo sausage sliced
- (optional) 2 handfuls of shrimp
- 2 cups Woodchuck cider
- 2 cups chicken broth
- ½ onion diced
- 2 celery shoots diced
- 1 large jalapeno pepper sliced
- 1 bell pepper diced
- 3-4 garlic cloves minced
- 1/3 cup all-purpose flour
- 1/3 cup cooking oil
- SPICES
- 1 tbs. oregano
- 1 tbs. basil
- 1 tbs. thyme
- 1 tbs. cayenne
- 1 tbs. paprika
- 1 tbs. black pepper
- 1 tbs. garlic powder
- 1 tbs. onion powder
- 1 tsp. salt
- 1 tsp. crushed red pepper
Recipe
In your slow cooker, combine the chicken broth, Woodchuck, raw cubed chicken, and turn on high. In a saucepan, fry the sausage slices until golden brown and add to the slow cooker along with the sliced and diced veggies. Combine all the spices, and toss them in to!
With the flour and cooking oil, make a roux. Combine and heat on medium low for 15-20 minutes, stirring regularly. Add to the cooker, and stir.
Cook on high for about 5 hours, and then turn to the low setting. Throw in the shrimp about 20 minutes before you serve, and VOILA! Pour over some rice or dunk in some tasty bread, and you’ve got the game day dish of the year.
